Seasoning

Most of the dishes feel complete only when we put seasoning in it.  It is very popularly known as Vagarne in kannada and Tadka in Hindi.

In my blog, I have mentioned about putting seasoning in many places and not really mentioned how to do it there as it is one of the most common things.  So, here is how we can put seasoning -

Normal Seasoning

Ingredients –

  • Jeera – 1/4 tsp
  • Urad dal – 1/4 tsp
  • Mustard Seeds – 1/4 tsp
  • Bengal gram – 1/4 tsp
  • Asafoetida powder (hing) – 1 pinch
  • Red chillies – 1 (cut into 3 to 4 pieces)
  • Curry leaves – 4 to 6
  • Vegetable oil – 1 tsp

Preparation -

1) Heat oil in a small kadai (vagarne sountu)

2) Add mustard seeds, jeera, urad dal, bengal gram and red chillies and heat it till the mustard seeds crackle.

3) Now add hing and curry leaves to the same and off the stove.  

Seasoning is ready!

Jeera Seasoning

Prepare seasoning in a similar fashion however without bengal gram and with 3/4 tsp of jeera.

Fenugreek Seeds Seasoning

Prepare seasoning with Fenugreek seeds ( menthe) instead of bengal gram.  Dont put more than 5 grains of fenugreek seeds.
