Stuffed Brinjal Palya

Ingredients –

  • Brinjal – 6 to 8 (green on violet – small one’s)
  • Onion – 2 (chop into very small pieces)
  • Tomato – 1
  • Coconut – 1 cup
  • Red chillies(Byadige variation) – 5
  • Urad dal – 1/2 tsp
  • coriander seeds – 1 tsp
  • Jeera – 1/2 tsp
  • Curry leaves – 4 to 5
  • Cooking oil – 1 tbsp
  • coriander leaves – handful (chopped)
  • Salt to taste

Preparation –

1) Grind coconut, red chillies, tomato, urad dal, coriander seeds, jeera, salt and curry leaves together to a fine paste.  Dont add water while grinding.

2) Mix the ground paste with finely chopped onions.  The stuffing is ready.

3) Now, slit the brinjals from their base as shown in the picture above and oil the complete exterior surface of the brinjal.

4) Stuff each brinjal with the stuffing as shown in the picture.

5) In a flat non-stick pan, add 3/4 tbsp oil and heat in medium flame.  Keep all the brinjals in the pan and close the lid.  Let this boil for 4 to 5 minutes.  In case you have left over stuffing, put it on top of the brinjals now.

6) Just push the brinjals gently in between.  Add 1/4 glass of water in the sides and cook with closed lid till the brinjal boils completely.  It take around 8 to 10 minutes.

Garnish it with coriander leaves and serve with rice.  This mangalore brinjal palya… is really mouth-watering and tasty to eat.  It tastes best when done with Matti gulla ( the green colored brinjal one gets in mangalore)
